8 cooked potatoes, peeled and diced
1 lb. American cheese or 1/2 sharp with 1/2 velveeta
1 c. mayonnaise
1/2 c. onion, chopped
1/4 c. bacon bits
salt and pepper to taste
1/2 lb. bacon, chopped and partially fried
1/4 c. stuffed ripe olives, sliced
boiled eggs, desired amount

Directions:

Combine potatoes and coarsely grated cheese with mayonnaise, onion, bacon and chopped eggs. Place in a 9x13 greased pan and top with fresh bacon pieces and olives.
Bake at 325º for 45 minutes.
