1 c. sugar
½ c. shortening or butter
2 eggs
2 c. flour
½ tsp. salt
1 tsp. baking soda
2 T. sour milk or buttermilk
3 very ripe bananas, mashed
½ c. chopped nuts (pecans or walnuts)
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350ºF.
Grease and flour a metal loaf pan.
Cream shortening and sugar. Combine flour & baking soda and add to mixture alternately with eggs, milk and bananas. Mix well but do not over beat. Stir in nut meats and vanilla.
Pour into prepared pan. Bake for one hour or until toothpick inserted in center comes out clean.
Cool on rack 10 min. then remove from pan.

Tastes great by itself, but serve toasted with softened cream cheese for a special treat.

I have had this recipe since 1958 when I was attending Columbus Business University and staying in a dorm with kitchen privileges. I had two roommates and we all used to take turns going home for the weekend and bringing back our mom's homemade goodies to share. This is one of them; made by Mrs. Ritter from Wapakoneta, Ohio for my roommate Tex (I really don't remember her real name, we nicknamed her Tex only because her last name was Ritter, and if you're under the age of 70 you won't even know who Tex Ritter was!)
