1 bunch parsley, finely chopped
5 cloves garlic, pressed
1 c. balsamic vinegar
1 c. olive oil
1 t. red pepper flakes
2 T. salt
1/2 lemon's juice

Directions:
Directions:
Oven roast vegetables. (eggplant, asparagus etc.) Then marinate for 2-3 hours. Put on a shallow platter with rim, top with marinade and serve with crusty bread.

This appetizer is addicting! We first had it at the Lacy's house, they got the recipe from Greg Koenig who owns a local winery. We served it at our marriage seminar and at Levi and Georgia's wedding. The Lacy's have blessed us many times over the years with their friendship and their cooking skills.
