1 large stewing chicken, 4-5 lb.
1 large onion, chopped
1 1/2 t. salt

1 c. rice
2 1/2 c boiling water
1/2 c. green onion, chopped
1 1/2 t. salt

1/2 c. butter
1/2 c. flour
4 c. chicken broth
2 (4 oz) cans mushrooms and liquid
1 c. evaporated milk
1 t. salt
1/2 t. pepper
1/2 t. turmeric
1/2 tsp. crushed oregano

Directions:
Directions:
Cook chicken with onion and 1 1/2 t. salt. Cool and cut into small pieces.
Combine rice with water. Add salt, butter, and onion. Cook until rice is done.
Melt butter in large sauce pan. Stir in flour. Add chicken broth, mushroom juice and milk. Cook, stir until sauce is thick and smooth. Add salt, turmeric and oregano.
Place rice in bottom of baking dish. Spread on chicken, mushrooms and gravy. Add shredded cheese to top.
Bake at 350º for 30 minutes.
