1 head cauliflower cut into bite size pieces
2 chicken breasts
1 cup cheddar cheese shredded
4 slices bacon cooked and crumbled
2 green onions chopped
Salt and pepper to taste

0. Preheat your oven to 350 deg F.

1. Spread the cauliflower out on a baking sheet covered with foil, sprinkle with salt and pepper, and bake for about 20 minutes or until fork tender.

2. While the cauliflower is in the oven, cook chicken and bacon. Cook 2 chicken breasts in a skillet with oil. Simultaneously, cook bacon in a separate skillet. After chicken is cooked through and bacon is crispy, slice the chicken and crumble the bacon.

3. Push all of the cauliflower into a pile on the baking sheet. Top with sliced chicken, crumbled bacon, and shredded cheddar. Return to the oven for about 5 minutes until the cheese is melted. Top with chopped green onions and serve hot.
