Coconut Banana Bread with Lime Glaze Recipe

2 C all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
1 C sugar
1/2 C softened butter
2 large eggs
1 1/2 C mashed ripe bananas (about 3)
1/4 C plain yogurt (not fat free)
3 T dark rum (do not use rum flavoring)
1/2 tsp vanilla (use 1 tsp if you are not using rum)
1/2 cup flaked sweetened coconut
1 T coconut to put on top of bread
Cooking spray

Glaze
1/2 cup powdered sugar
1 1/2 T fresh lime or lemon
2T butter
1/2 tsp vanilla

Directions:
Directions:
Preheat oven to 350º
Lightly spoon flour into dry measuring cups: level with knife
Combine flour, baking soda and salt stirring with a whisk
Place sugar and butter in large bowl and beat until well blended.
Add eggs one at t time, beating well after each.
Add mashed banana, yogurt, rum and vanilla; beat until blended.
Add flour mixture and beat on low speed just until moist.
Stir in 1/2 C coconut.
Spoon batter into a 9X5 inch loaf pan coated with cooking spray.
Sprinkle with 1 T coconut.

Bake 350º for 1 hour or until a wood pick inserted comes out clean.
Cool just 10 minutes on wire rack before removing from pan.

You can make smaller loafs (4) but only cook them around 40 minutes. (You can double recipe).

Mix glaze together and drizzle over warm bread.
