¼ Cup Sugar
2 tsp Cornstarch
1 Envelope Unflavoured Gelatine
2 tsp Instant Coffee
1 tsp Vanilla
1 Tbsp Sugar
3 Eggs, separated
1½ Cups Milk
¾ Cup Semi Sweet Chocolate Chips
½ Cup Whipping Cream
1 Tbsp Coffee Liquor or Rum
Directions:
Directions:
In a heatproof bowl, combine sugar, cornstarch and gelatine; add egg yolks, beat until light. Reserve. Heat milk, add chocolate chips, instant coffee, blend until smooth.

Whisk flavoured milk into the egg mixture and set bowl over a pan of hot water on medium heat for about 10 minutes. Stir until mixture is lightly thickened. DO NOT BOIL

Remove from heat, stir in vanilla, set in fridge for about 1 hour until softly jelled but not firm.

Whip the cream until stiff add the liquor and set aside, beat egg whites until stiff, whisking in remaining sugar. Carefully fold the whipped cream and then the egg whites into chilled mocha cream.

Pour into goblets, refrigerate overnight until set. Garnish with whip cream and shaved chocolate.
