Big chopped onion, 3 thin sliced carrots, 4 stalks coarsely chopped celery
a few tablespoons canola oil
3 cups of chicken chunks
6 cups chicken broth
1 1/2 cups self-rising flour
1/4 cup shortening
2 tablespoons chopped fresh parsley
1/2 cup chicken broth

Directions:
Directions:
Get a big pot and cook the onion, carrots and celery in the oil until they get tender. Then throw in the chicken chunks, pepper (if you like it, if not leave it out) and chicken broth. Turn the heat down and simmer it for about 15 to 20 minutes. Meanwhile, put flour in a bowl and cut in the shortening until the mixture is like crumbs. Add the parsley and chicken broth and stir just until it’s all moistened. Then drop that dough, by the tablespoon into the simmering chicken stuff, cover the pot, and do not peek while it cooks for the next 15 minutes. It’s like taking the cover off when rice is cooking, very bad juju. Just don’t do it.
