7-10# brisket, trimmed
2 Tblsp. black pepper
1 Tblsp. garlic salt
1 c. brown sugar
2 tsp. cayenne pepper
2 tsp. smoked paprika
2 tsp. chili powder
4 Tblsp. Famous Dave's BBQ rub
2 Tblsp. salt
Dijon mustard
1/2 c. cider vinegar
1/4 c. Worcestershire sauce
1/4 c. vegetable oil

Directions:
Directions:
1. Place brisket on a large baking sheet and pat dry with paper towels. Coat brisket with mustard. Mix seasonings. Rub the spice mixture all over brisket and let sit 8 hours.
2. Set smoker to 210-225°.
3. Place brisket in smoker fat side up. I usually figure one hour per pound at 220°.
4. When internal temperature reaches 160°, remove brisket from smoker and set on foil. Mix cider vinegar, Worcestershire, pepper, and oil. Coat brisket in mixture. Wrap in foil. Return to smoker and cook until brisket has reached internal temperature of 190°.
5. Remove brisket and rest one hour. Slice brisket against the grain prior to serving.
