2 pounds shrimp, peeled and deveined

3 tbsp. olive oil

3 tbsp. butter

3 garlic cloves minced

3 lemons

2 cups dry white wine (use wine you would drink)

Chicken broth

2 cups cooked rice

2 tbsp. chopped parsley (fresh or dried)

In a large skillet add olive oil and butter to pan. Add garlic and cook 2 minutes until garlic is soft.

Add wine and lemon juice, bring to a boil, reduce heat to medium and add shrimp. Cook until shrimp is pink about 5 minutes. Add fresh parsley.

Serve shrimp mixture over rice in equal servings.

Serve with additional lemon slices if desired.

Note: To make rice more flavorful, use chicken broth instead of water when cooking rice.
