2 pounds (12 to 15 count per pound) shrimp in shell

3 tbsp. olive oil

2 tbsp. dry white wine (use wine that you would drink)

salt and pepper

1 ½ sticks butter - room temperature

4 cloves garlic minced

¼ cup minced shallots

3 tbsp. minced parsley (fresh or dried)

1 tsp. minced rosemary (fresh or dried)

¼ tsp. crushed red pepper flakes

1 tsp. lemon zest

2 tbsp. fresh lemon juice

1 extra large egg yolk

⅔ cup panko bread crumbs

Lemon wedges for serving

Preheat oven to 425 degrees.

Peel, devein and butterfly the shrimp, leaving the tails on. Place the shrimp in mixing bowl and toss gently with oil, wine, 2 tsp. sale and 1 tsp. pepper. Allow to set at room temperature while you prepare butter and garlic mixture.

Note: Your seafood monger can prepare shrimp for you, just ask to keep tails on.

In a small bowl mash the softened butter with garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, bread crumbs, ½ tsp. salt and ¼ tsp. pepper until combined.

Starting from the edge of a 14 inch oval gratin dish, arrange the shrimp in a single layer, cut side down, with the tails curling up and towards the center of the dish. Pour the remaining marinade over the shrimp. Spread the butter mixture evenly over the shrimp.

Bake for 10 to 12 minutes until hot and bubbly.

Serve with lemon wedges.
