Ingredients:  
4 bell peppers
1/2 yellow onion
1 c. salsa
1 pkg. Spanish rice
taco seasoning
garlic
pepper
1 regular pork roll

Directions:
Directions:
1. Bring pot of salt water to a boil. Submerge and boil peppers 2-3 minutes.
2. Brown meat and diced onions, drain. Add seasonings to meat and salsa. Transfer meat to pot.
3. Cook rice according to package.
4. When rice is finished, add meat to rice. Stuff peppers with mixture, add salsa.
5. Bake peppers in ungreased dish at 350º for 20-25 minutes. Sprinkle with cheese before serving.
