8 oz. ricotta cheese
4 oz. cottage cheese
3 Tblsp. parmesan cheese
1 Tblsp. parsley
2 Tblsp. basil
salt, pepper, and garlic powder
2 large zucchini (1/4 inch slices)
1 Italian sausage roll, cooked and crumbled
Marinara sauce
Mozzarella cheese

Directions:
Directions:
1. Add first six ingredients, blend, and chill.
2. Heat oil in pan. Cook zucchini slices on each side until pliable. Transfer and cool.
3. Preheat oven to 375º. Spray 10 x 5 x 7 cooking dish. Spread part of marinara sauce on bottom. Blot zucchini and lay in marinara sauce. Spread filling and sausage and roll up. Top with mozzarella cheese and remaining marinara sauce. Bake 20-25 minutes.
