Panera's Broccoli Cheddar Soup Recipe

Ingredients: (1) pound of fresh broccoli - chopped
(1) medium onion
(2) tbsp. butter melted
½ cup flour
½ cup melted butter
(4) cups Half and Half (in the dairy section)
(4) cups chicken stock
(2) cups carrots diced thin
(16) ounces of shredded cheddar cheese
Salt and pepper to taste

Directions:Saute onion in 2 tablespoons butter in large soup pot until soft. Remove cooked onion from pot and set aside. Add ½ cup butter to pot and melt. Add flour to melted butter and stir for 3 to 5 minutes until light brown in color. Slowly add half and half and chicken stock. Simmer for 20 minutes. Add broccoli, carrots and cooked onions and cook for an additional 30 minutes on simmer until broccoli and carrots are soft. Add salt and pepper to taste.
Pour the soup mixture into another container. Gradually pour soup in batches into a blender and puree. Continue to puree until all soup is smooth. Note: Remove lid from blender entirely and cover top with a towel before blending or if you have a lid with a stopper, remove stopper before blending. Hot soup needs air to expand.
If you have a hand blender, puree soup in pot until smooth.
Return soup to pot and add cheddar cheese until cheese is completely melted.
Serve with crackers and enjoy. |
