(1) stick of butter

(1) medium onion chopped

(1) 14.5 ounce can of cream of chicken soup

1 ˝ cups of rice - uncooked (white or brown)

(1) block of Velvetta cheese

(1) bag of frozen broccoli - defrosted

9 x 13 baking dish

Preheat oven to 350 degrees

In a large frying pan add butter until melted. Add onion and sauté until softened. Add rice and sauté with onions for about 5 minutes stirring occasionally. Add cream of chicken soup and broccoli and sauté for about 10 minutes until broccoli is soft.

Cut the cheese into cubes and add gradually to the rice mixture until well combine.

Transfer to baking dish and bake in over for 45 minutes or until golden brown around the edges.
