¼ cup millet
¼ cup quinoa
2 Tablespoons amaranth
1 cup old fashion oats
2 ¼ cups buttermilk, divided
1 tablespoon olive oil
3 cups whole wheat flour
1 cup flour
2 tablespoons flaxseed
1 tablespoon kosher salt
2 teaspoons baking soda
¼ cup sunflower seeds
4 tablespoons unsalted butter, cut into pieces
3 tablespoons brown rice syrup (or mild flavored molasses)

Directions:

Mix first four ingredients, plus ½ cup water and 1 cup buttermilk in bowl, cover for 8-12 hours. (or bring ingredients to simmer in small pan over low heat, let sit for 2 hours) Preheat oven to 350°. Lightly oil 8” cake pan.

Mix remaining ingredients in separate bowl, working butter with fingers until largest pieces are pea size. In small well of mixture add brown rice syrup, remaining 1 ¼ cups buttermilk, 1 tablespoon oil and oat mixture. Mix and form into a ball, placing in cake pan. Brush with buttermilk, and top with sunflower seeds and oats. Cut large X in top and bake until golden brown, 55-70 minutes. Thermometer should read 190°
