2 lbs. chicken breasts
2 small bell peppers, sliced
1 onion, chopped
½ c. chunky peanut butter
1 tbsp. lime juice
½ c. chicken broth
¼ c. soy sauce
1-2 tbsp. honey, to taste
¼ c. peanuts (unsalted), chopped for garnish
¼ c. cilantro, chopped for garnish

Directions:
Directions:
Place peppers and onions at bottom of slow cooker. This will serve as a base for the chicken to rest on and prevent it from drying out. Place chicken on top of peppers and onions. In a bowl, mix together peanut butter, lime juice, chicken broth, soy sauce, and honey. Pour sauce over chicken.

Cook chicken for 3-4 hours on High or 6 hours on Low. When 15 minutes remain of cooking time, shred chicken with two forks. Cover and continue cooking for the remaining time. Remove from slow cooker and serve over rice, noodles, salad, or in lettuce wraps. Top with chopped peanuts and cilantro for garnish.
