1 lb. chicken, cubed
⅓ c. sesame oil
¼ c. sesame seeds
⅓ c. soy sauce
3 tbsp. brown sugar
2 cloves garlic, chopped fine or crushed
1½ tsp. fresh ginger, chopped or ¾ tsp. ground/powdered ginger
3 green onions/scallions, chopped

Combine oil and sesame seeds in a saucepan. Brown sesame seeds. Mix sesame seed mixture, soy sauce, brown sugar, garlic, ginger, and ½ of green onions in a bowl. Add chicken and marinate for 1 hour, stirring occasionally.

Place chicken and marinade in a shallow baking dish. Bake at 550º for about 15 minutes. Do not overcook. Can broil 4-5 inches from heat for about 7 minutes, stir often.

Garnish with remaining green onions. Serve over rice. For variety, add broccoli and carrots. Cut into bite-sized pieces before cooking and add after marinating. Serves 4.
