5 c. peeled, sliced tart apples
1 c. packed brown sugar
1/4 c. water
1T. lemon juice
1/4 c. flour
2 T. granulated sugar
1 tsp. vanilla
3/4 tsp. salt
3 T. butter

Pastry for 2 crust pie

Combine apples, brown sugar. water, lemon juice in saucepan. Cover; cook slowly until apples are just tender - 7-8 mins. Blend flour, sugar; add to apples, syrup. Cook uncovered, stirring constantly, until syrup thickens - about 2 mins. Remove from heat. Add vanilla, salt, butter. Cool to room temp. Heat oven to 425. Line 8" pan with pastry. Fill with apple mixture. Cover with top crust; slit for steam to escape. Bake 40-45 min.

When we had a producing apple tree in our yard, I was often looking for apple pie recipes that were at least a little different. This one came to be a standby. It is also a way to make apple pie filling and freeze it for future baking.
