2 pounds white potatoes (6 medium)
½ tsp salt
1 ¼ cups mayonnaise
1 Tbls yellow mustard
¼tsp black pepper
1 cup thinly sliced celery
⅓ cup chopped onion (1 small)
6 hard boiled eggs

Directions:
Directions:
In a medium pan, cover potatoes with water and bring to a boil. Reduce heat.
Simmer covered for 20 - 25 minutes. Drain and cool slightly.

Peel and cube the potatoes.

In a large bowl, combine mayonnaise, mustard, salt and pepper. Stir in celery and onions.
Add potatoes and grate 4 eggs into the mixture. Toss lightly, cover and refrigerate 6 hours.

To serve, sprinkle with paprika and top with egg slices.
