2 cups flour
2 teaspoons baking soda
½ teaspoon salt
2 cups sugar
¼ cup vegetable oil
3 eggs
¾ cup buttermilk
2 teaspoons vanilla extract
1 can (8 ounce) crushed and drained pineapple
1 cup coconut
1 cup chopped pecans

Directions:

Mix together flour, soda, salt, sugar, oil, eggs, buttermilk and vanilla. Add pineapple, coconut, and pecans. Bake at 350º till toothpick comes out clean, approximately 30 to 35 minutes.

1 cup sugar
½ cup margarine
½ cup buttermilk
3 tablespoons light corn syrup
2 teaspoons vanilla extract

Just before cake is done combine all ingredients except vanilla. Bring to a boil over medium heat, stirring constantly, for approximately 5 minutes. Remove from heat and add vanilla. Prick cake with fork really well. Pour mixture over hot cake.

This is a recipe I got from a friend at school. This is a very moist and delicious cake, and easy to make. I usually take it to pot lucks and everyone wants the recipe.
