Ingredients: 2½ cups flour 2 tsp baking powder 1 tsp baking soda ½ tsp salt 3 ripe bananas ½ cup milk 1 tsp vanilla extract ¾ cup butter at room temperature ½ cup sugar ½ cup light brown packed sugar 3 large eggs 1 cup mini chocolate chips

Directions:1. Heat oven to 375º. 2. Line muffin pan with paper liners. 3. In medium sized bowl whisk together flour, baking soda, baking powder and salt. 4. In another bowl use a fork to mash the bananas, then stir in milk, and vanilla extract until well blended. 5. In large bowl use a mixer set on medium speed to beat together the butter and both sugars until light and fluffy, about 3 minutes. 6. Beat in eggs one at a time - mixing well after each egg. 7. Reduce mixer speed to low and add 1/3 of the flour mixture. 8. Add 1/2 the banana mixture and blend again. 9. Continue alternating between banana and flour until all ingredients have been well blended. 10. Fold in chocolate chips. 11. With ice cream scooper fill muffin cups 2/3 full. 12. Bake at 375º until toothpick inserted into the muffin comes out clean - about 25 minutes. |
