1 cup chocolate animal cracker crumbs
¼ cup melted butter
½ teaspoon ground cinnamon
3 (8 ounce) packages softened cream cheese
8 ounce carton sour cream
1 cup sugar
8 ounces melted semisweet chocolate
3 eggs
½ cup whipping cream
2 teaspoons vanilla extract
⅓ cup melted semisweet chocolate

For crust, in a mixing bowl combine the animal cracker crumbs, butter and cinnamon. Spread mixture in the bottom of a 9" springform pan. Set pan aside.

For filling, in a large mixing bowl combine cream cheese, sour cream, sugar and 8 ounces of melted chocolate. Beat with an electric mixer on medium speed until combined. Add eggs all at once. Beat on low speed just till combined. Do not overbeat. Stir in whipping cream and vanilla.

Place pan on baking sheet. Pour filling onto crust. Bake in 325º oven for about 55 minutes or until center appears nearly set when gently shaken. Cool in pan for 15 minutes. Loosen the sides; Cool completely. Cover and chill for at least 4 hours.

Before serving, transfer the cheesecake to a platter. Drizzle with ⅓ cup melted chocolate.
