Pork Loin
1 Onion, diced
2-3 Tbs butter
1 cup pitted prunes, soaked for 1 or more hours in 1/2 cup of Madeira wine
¼ cup balsamic vinegar
1 cup beef stock
salt and pepper

Directions:
Directions:
Preheat oven to 350º.
Salt and pepper the pork and brown on all sides in a little oil, remove.
Add butter and onion, lightly saute'.
Put the pork on top of the onions and place in oven - bake till done.
Remove the pork from pan; drain the prunes and add the Madeira to the heated pan along with the balsamic and broth. Bring to a boil and reduce the liquid. Add the prunes to the sauce and cook for 3-4 minutes. Season with salt and pepper.

Cut the meat in ½” slices and serve with a few spoonfuls of sauce and prunes.
