1 lb. sausage
6-8 eggs, beaten
1-2 c. shredded Monterey Jack, Colby Jack or Cheddar cheese or Mexican cheese blend
1 c. milk (any type)
½ - ¾ c. flour (depending on how thick you like it)
1 tsp. baking powder
1 ½ c. small curd cottage cheese
1 can Rotel tomatoes, drained

Mix all together. Pour into buttered 9x13 pan. Bake at 350º for at least 40 minutes until brown and puffy.

This is one of my favorite breakfast casseroles. If you want it spicier, add spicy sausage and hot Rotel tomatoes.

Freezes well.
