3 eggs
2 cups sugar
1 cup biscuit mix
½ teaspoon salt
1½ cup dates
1 cup chopped nuts of your choice

Directions:
Directions:
Beat eggs until light, gradually add 1 cup of sugar and beat until thick.

In another bowl combine biscuit mix and salt. Stir into egg mixture. Add dates and nuts.

Pour into a greased 9x9 pan. Bake at 350º for 35 minutes. Cool just enough to be able to cut into log shaped bars, about 1x3.

Place remaining cup of sugar on paper plate. Remove bars from pan and roll in the sugar to coat all sides of the bars.

My husband's grandmother used 5 eggs and sifted flour instead of biscuit mix. I cut down on the number of eggs and use the biscuit mix. I found a recipe in a 1965 "Better Homes and Garden New Cookbook" that used biscuit mix and less eggs and the bars are just as good - it may be the sugar they are rolled in!
