2 Tbsp unsalted butter
2 Tbsp fresh orange juice
1 Tbsp fresh lemon juice
½ cup packed brown sugar
2 Tbsp banana liqueur
2 Tbsp brandy (apricot, peach, etc.)
A pinch of ground cinnamon, optional
4 bananas, sliced thick
1 quart vanilla ice cream
Pinch of ground cinnamon (optional)

Melt butter in large non-corrosive skillet over medium heat. When foam subsides, stir in orange juice, lemon juice and brown sugar. Heat to simmering. Simmer until mixture bubbles and coats a metal spoon, about 3 minutes. Add banana liqueur and ignite carefully with a long kitchen match or lighter. When flames are extinguished, add brandy and carefully flame again. When flames are extinguished, add bananas, toss to coat with the sauce. Spoon bananas and sauce over ice cream. Serve immediately.

Tip: A pinch of ground cinnamon over the skillet when flaming the alcohols cause eye-catching sparks.

So delicious it's swoon-worthy! Bryan and Janelle actually introduced me to Bananas Foster. I used to make it tableside in an electric skillet to impress my guests with the flaming and cinnamon sparkles! It was great to watch their reactions! Don't worry - the alcohol burns out, leaving only great flavor!
