Spring Roll:
vermicelli noodles
carrot cut into long slices
fresh cooked shrimp - any size
lettuce
mint leaves
rice paper

Sauce:
1 cup red onion minced
1 cup chopped mint
½ cup basil or cilantro chopped
3 limes - the juice - or enough to make 1 cup
2 Tbsp fish sauce
2 tsp sugar
flaked red pepper to taste

Directions:
Directions:
Boil water, when boiling add vermicelli noodles. Cook until soft - rinse in cold water so they do not stick together (if they glue together - pour hot water over them to separate, then cold).

Soften rice paper in hot water.

Lay rice paper on plate, add:
1. small lettuce leaf
2. slice of carrot
3. small amount of vermicelli noodles
4. two shrimp - or shrimp to cover length of wrap
5. fresh mint leaves

Roll together as one would a burrito. Dip fingers in water if rice roll becomes sticky.

Lay on a bed of lettuce and service with sauce.

Sauce:
Mix all ingredients together and store in fridge. Lasts about a week. Good on other meats too.
