2 cans of Red,Tart Pitted Pie Cherries
1½ cups sugar
3 Tbls cornstarch
¼ tsp red food coloring (optional)
¼ tsp almond extract (optional)
1 Tbls butter or margarine
2 crusts for a 9 inch pie (made or purchased)

Crust Preparation:
Prepare according to box or recipe instructions.
Line a greased pie pan with ½ of the crust mixture.
Hold the other ½ of crust mix to cut a top crust or Lattice Strips for pie.

Pie Filling Preparation:
Preheat oven to 400º.
Drain cherries and reserve juice from 1 can.

In saucepan, stir cherry juice into the combined mixture of cornstarch and half of the sugar.
Cook over medium heat, stirring constantly until thickened. Remove from heat.
Gently stir in remaining sugar, cherries and optional ingredients.

Pour cherry filling into the prepared pie pan crust.
On top of pie, place the crust or previously cut Lattice strips.

Bake 40 - 45 minutes.
** If necessary, cover edges of pie with aluminum foil during last 15 min to prevent over browning.

Cool 3-4 hours before serving. Serve with ice cream or cream.

I've made Cherry Pie's by just using the "ready made" pie filling - but there really is a difference in the taste when making it from scratch. I think it's worth the trouble! Makes 8 servings
