Pastry for a double crust pie (can make or buy box mix)

8 cups fresh peaches
2 cups sugar
2-4 Tbls flour
½ tsp nutmeg
1 tsp almond extract
⅓ cup melted margarine

Directions:
Directions:
Peaches Preparation:
Combine peaches, flour, sugar, nutmeg and set aside until syrup forms.
Bring Peaches to a boil. Reduce the heat and cook 10 minutes.
Remove from heat and blend in extract and butter.

Crust Preparation:
Roll out half of pie dough to ⅛ inch thick.
Cut the dough to fit 2 square casserole dishes.
Bake the crust at 475º for 12 minutes or until brown.

Spoon peaches into prepared crust.

Roll out remaining pastry dough and cut into ½ inch strips.
Arrange in lattice design over top of peaches.

Return to oven 10-15 minutes or until lightly browned.
