2 scallions
1 cucumber (mini)
3 radishes
cilantro (to garnish)
2 T. white wine vinegar
4 oz Red Cabbage
10 oz ground beef
1 t. garlic powder
1 T. Sesame Oil
1 t. Korean Chili Flakes
6 flour Tortillas
4 T. Sour Cream
1 t. sugar

Wash & Dry all produce. Thinly slice scallions, cucumbers and radishes. Pick cilantro leave from stems. Toss cucumber, radishes, white wine vinegar, a pinch or salt & pepper and 1 t. sugar in medium bowl. Heat a drizzle of oil in large pan over medium-high heat. Add scallions and cabbage to pan. Cook until softened (approx. 4-5 minutes). Toss in beef and garlic powder. Cook until no longer pink (approx. 4-5 minutes). Store in sesame oil. Season with salt & pepper and a pinch of chili flakes.

Stir together remaining chili flakes and sour cream in a small bowl. Season with salt & pepper. Prep tortillas. Fill tortillas with sour cream mixture, pickled veggies and cilantro.
