2 cups sugar
1 cup butter
4 eggs separated, egg yolks beaten with a fork
1 cup milk
3 cups all purpose flour
1 teaspoon vanilla
pinch of salt

Beat egg whites to a stiff froth. Beat the butter till almost white and add sugar gradually to make fluffy cream. Stir in the well beaten egg yolks and beat. Sift dry ingredients together 3 times to add alternately with milk to first mixture. Add vanilla. Carefully fold in the egg whites. Bake 3, 8 inch greased and floured cake pans at 350º for 35 minutes.

Terry's mom used this recipe to make her granddaughters favorite , Old Fashion Blackberry Jam Cake. She spread about 1/4 in. thick layer of jam between the layers and on top. For Todd's birthday she made the fudge icing for this cake. She also used this cake to make Strawberry Short Cake. All are delicious .

I found a fudge icing recipe that follows. I don't know if this is the same recipe Ruth used or not: 2 cups sugar, 1/4 cup coco, 3/4 cup milk, 2 Tablespoons corn syrup, 3 Tablespoons butter, 1 teaspoon vanilla, pinch of salt. Mix all except butter and vanilla in sauce pan. Bring to boil. Rapid boil about 5 minutes. (Soft ball stage) Remove from heat. Add butter and vanilla. Let cool down 15-20 minutes. At this point begin to beat with wooden spoon or whip till it begins to thicken. You can put it in a ice bath to speed up thickening. (Ice bath is setting the pan with icing in a larger bowl with ice and some water in it to chill it.This is easiest done in the sink.) Beat continually until it begins to thicken to a spreading consistency. It may still be slightly runny. Spread between lawyers as well as on top. Let it drizzle on sides. Spoon back on the cake as you work with it until cake is covered and icing begins to set. It will continue to harden as it sets. This is so good!
