1 cup bleached all-purpose flour
¾ cup powdered sugar, divided into ¼ cup and ½ cup measures
1 tsp finely grated lemon zest (orange and lime zest work well too)
1 stick salted butter, softened
¼ tsp vanilla extract

1. Adjust oven rack to lower-middle position and heat oven to 350º.

2. Mix flour, ¼ cup powdered sugar and zest in a medium bowl. (Hint: To ensure the zest mixes in without clumping, mix in a Tbsp or two of the flour with the zest to separate all the zest threads first before mixing them all together).

3. Add butter and vanilla. Beat (or simply mix with hands) until ingredients form into a dough.

4. Drop cookie dough by teaspoons onto a parchment or Silpat-lined cookie sheet.

5. Bake until cookie bottoms are golden brown, 12-16 minutes.

6. Transfer cookies to a wire rack to cool completely.

7. Place remaining ½ cup powdered sugar in a quart-sized zipper-lock bag. Working a dozen at a time, drop the cookies into the sugar. Shake to coat.

8. The cookies can be stored in an airtight tin for up to a week.
