Cake:

4 separated eggs 1/2 cup sugar 1/3 cup Sugar 1 tsp. vanilla
1/3 cup sugar 1/3 cup cocoa 1/2 cup flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1/3 cup water

Filling:

1 cup heavy cream beaten
1/4 up powdered sugar
1/4 cup chopped peppermint candy
2 drops red food coloring
1/2 tsp. mint extract

Glaze:

2 T butter, 2 T water, 2 T Cocoa
1 cup powdered sugar, 1 tsp. vanilla

Directions:
Line jelly roll pan with foil, grease generously
Beat eggs whites untill foamy
Gradually add 1/2 cup sugar, beat until stiff peaks form
Beat egg yolks with vanilla for 3 minutes on high
Gradually add 1/3 cup sugar, beat for 2 minutes
Combine dry ingredients, add to egg yolk mixture alternating with water .
Fold chocolate into mixture into egg whites mix with spatula, spread evenly in pan.
Bake at 375 for 12 to 15 minutes or until top springs back.
As soon as out of oven, put on towel that has been sprinkled with powdered sugar.
Peel off tin foil and roll.
Place on a wire rack to cool.
Prepare filling and spread evenly on cake.
Roll up, glaze, run fork through it to make it look like a log
Decorate with red and green cherries and a sprig of Holly.

My friend Diane (Folland) Shumway gave me this recipe and made me one for Christmas one year. I loved it, It was delightful! Marilyn Neerings and I made about ten of them one year at Christmas to give to our friends and neighbors for Christmas. I can't remember how long it took but It was quite the undertaking.
