Ingredients: Pavlova - A big meringue type cookie - served with fresh whip cream and any type of fresh berries available
3 egg whites 6 ounces sugar ½ tsp vanilla ½ tsp vinegar - white ½ tsp cornstarch 8 ounces of whipping cream fresh berries - raspberry - blueberry - blackberry - strawberry - marionberry

Directions:Beat egg whites with a pinch of salt until stiff. TAKES A WHILE - I usually do them without a mixer (a hand whisk).
Add sugar, 1 teaspoon sugar at a time and keep beating until very stiff. Add vinegar and vanilla. Add cornstarch last and give just a couple of turns of the whisk to mix. Arrange meringue in a circle on a cookie sheet with parchment paper. Bake in 250º oven for 1½ hours, cool and decorate with whip cream and berries. Can be made in the morning before your event that evening. It's gooey:) |

Notes: This has become a staple dessert for us in the summer time because we can make the meringue in the morning and then I can prepare the rest of the meal later in the day.
