1 tablespoon olive oil
1 small white or yellow onion, chopped
2 cloves garlic, crushed
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 teaspoon curry powder
1 (28 ounce) can whole peeled tomatoes, with their juice
1/2 cup water (I substitute coconut milk or milk to make this creamy)

Optional toppings:
Plain Greek yogurt
Fresh cilantro leaves

Heat olive oil in a medium saucepan over medium heat. Add chopped onion, crushed garlic, salt and pepper and cook, stirring until soft - 3 to 5 minutes. Add curry powder and cook, stirring until fragrant, about 30 seconds. Add canned tomatoes along with their juice and water, milk or coconut milk; bring to a boil. Allow to cool slightly and blend in batches until smooth. Return to pan and heat through. Serve topped with optional Greek yogurt and/or cilantro leaves.
