1 yukon gold or russet potato, scrubbed and cut into 3/4 inch cubes
1 sweet potato or yam, peeled and cut into 1/2 inch cubes
1 beet, peeled and cut into 1/2 inch cubes
1 cup baby carrots
1 red onion, coarsely chopped
2 tablespoons olive oil
Salt and pepper to taste

Optional fresh parsley as garnish, rinsed

Preheat oven to 500º. Over medium flame, heat oil in a roasting pan until hot, approximately 1-1/2 minutes. Add cubed potato, carrots and red onion; stir to coat. Place in preheated oven and bake for 15 minutes. Add yam and beet cubes to mixture, stir and bake another 20 minutes, or until golden brown, stirring every ten minutes. Spoon veggies onto a platter, sprinkle with salt and pepper to taste and garnish with optional fresh parsley.
