1 cup butter (2 sticks) softened
1½ cups granulated sugar
1 egg
2¼ cup flour
½ tsp baking powder
½ tsp kosher salt
1 tsp vanilla extract
¼ granulated sugar for rolling cookies in before baking

Heat oven to 350º. Line cookie sheets with parchment paper

Cream together butter, granulated sugar until light and fluffy. Add egg and mix until well combined.

On low speed, mix in flour, baking powder, salt and vanilla.

Scoop cookie dough by the spoonful and roll into a ball.

Add the ¼ cup granulated sugar into a small bowl and roll the cookie ball in the sugar before placing on the cookie sheet. Be sure to coat each cookie ball well in the sugar. Lightly press each cookie down on the pan before baking.

Bake 8-10 minutes or until lightly browned.
