Cake:
2 cups flour
1 tsp baking powder
1½ tsp baking soda
2 tsp cinnamon
1 tsp salt
2 cups sugar
1½ cup oil
4 eggs
2 cups grated carrots (6-7 medium carrots)
8½ ounce can crushed pineapple
½ cup chopped nuts

Frosting:
½ cup butter
8 ounce package of cream cheese
1 tsp vanilla
1 pound confectioners sugar

Directions:
Directions:
Preheat over to 350º. Sift together the dry ingredients. Add oil and eggs, mix well. Add carrots, pineapple and nuts. Turn onto a large greased pan. Bake 45 - 50 minutes or until done. Cool and turn onto wire rack.

Cream Cheese Frosting
Cream together ingredients. Sift sugar then beat into rest of the ingredients. If too thick, add a little milk until mixture is of spreading consistency.
