1 bunch of lacinato kale, de-stemmed and cut into thin ribbons
1 tsp sea salt
½ tart green apple, diced
⅓ cup currants
⅓ cup sprouted sunflower seeds, toasted
⅓ cup gorgonzola
¼ cup extra virgin olive oil
2 Tbsp raw apple cider vinegar
salt to taste
pepper to taste

For the dressing, mix together the olive oil, cider vinegar, salt and pepper to taste.

Put kale in a bowl. Add sea salt, and massage with your hands until broken down, approximately 2 minutes. Gently add the rest of the salad ingredients. Toss with the dressing and enjoy.
