1 pound ground beef
1/2 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon black pepper
8 whole green chiles, canned
1-1/2 cup sharp cheddar cheese, shredded
4 eggs, beaten
1-1/2 cup milk
1/4 cup flour

Salsa
Sour Cream
Guacamole

Preheat oven to 350º. Grease a 10" x 6" x 2" baking dish. Cook beef and onion in skillet until done, adding salt and pepper. Drain fat. Place 1/2 of the whole chiles in the pan. Sprinkle with cheese. Top with cooked meat mixture. Layer with remaining chiles. Combine eggs, milk, flour, salt and pepper - beat until smooth. Pour mixture over the chiles, meat and cheese. Bake for 45 to 50 minutes or until knife comes out clean. Let stand 5 minutes. Serve with salsa, guacamole and sour cream.
