1 or 2 medium eggplants, peeled and sliced
1 1/2 Cup cracker crumbs
1 1/2 Cup grated cheese
1 1/2 Cup of milk
4 slightly beaten eggs
1/2 stick butter
1/2 tsp. pepper

Directions:
Directions:
Cook eggplant until tender and drain. Add all ingredients reserving 1/2 of cheese and 1/2 of cracker crumbs and small amount of butter.
Mix well. Pour into greased baking dish and sprinkle with reserved cheese, crumbs and butter.
Bake at 325º for 25 to 30 min.
