6 Large Diced Yellow Squash (Zucchini can be used)
Vegetable Oil
1 Large Onion Chopped
4 Tbsp Butter
½ Cup Sour Cream
1 tsp. Salt
½ tsp. Black Pepper
½ tsp. Garlic Powder
1 Cup Grated Cheddar Cheese
1 Cup Crushed Butter Crackers

Directions:
Directions:
Preheat oven to 350º. Saute squash in a little vegetable oil over medium low heat until completely broken down. About 15 to 20 Minutes. Drain squash and place in Colander. Squeeze all moisture from squash. Set aside. In medium skillet, saute onions in butter for 5 minutes. Mix all ingredients except crackers. Pour mixture into a buttered casserole dish and top with cracker crumbs. Bake for 25 to 30 minutes
