4 Venison Loin Steaks
1 tsp. Salt
1/2 tsp. Fresh Ground Black Pepper
4 Tbsp. Butter
2 Tbsp. Worcestershire Sauce
3 Tbsp. Tomato paste
1 tsp. Dry Mustard
1 Clove Garlic, crushed
1 cup Sour Cream

Directions:
Directions:
Season steaks with salt. In a skillet, heat butter and pan-broil steak about 3-4 minutes on each side. Transfer steaks to a platter, sprinkle with pepper, and cover to keep warm.

Add Worcestershire sauce, tomato paste mustard and garlic to skillet stirring constantly. Cook about 3-minutes. Stir in sour cream heating through, but do not boil.

Pour sauce over steaks and serve with sautéed potatoes, possibly braised endive, and choke cherry and/or apple-mint jam.
