4 Duck or 2 Goose Breasts, cut into thin slices
3 Tbsp. Canola Oil
1 med. Onion, finely chopped (about 1 cup)
3 Tbsp. Butter
1 lb. Fresh Mushrooms, sliced
6 Tbsp. Flour
2 cups Half-and-Half Cream
1 tsp. Salt
1/2 tsp. Pepper
1/8 tsp. Nutmeg
2 Tbsp. Dry White Wine
1 cup Sour Cream

Directions:
Directions:
Heat oil in large skillet. Add bird slices and onion, and cook quickly so birds are still pink on inside. Remove and set aside. Add butter and sauté mushrooms until tender. Remove and add flour to pan drippings, stirring constantly for about 1-minute. Add half-and-half, salt, pepper and nutmeg, stirring constantly until thickened. Return bird slices, onions and mushrooms. Simmer briefly to heat through. Stir in sour cream and wine. Heat, but do not boil. Serve over wild rice.
