3/4 pound ground beef, ground pork or bulk Italian sausage
1 cup chopped onion
2 cloves garlic, minced
1 7 1/2 ounce can tomatoes, cut up
1 8 ounce can tomato sauce
1 6 ounce can tomato paste
2 teaspoon dried basil, crushed
1 teaspoon dried oregano, crushed
1 teaspoon fennel seed, crushed (optical)
1/4 teaspoon peeper
6 dried lasagna noodles
1 beaten egg
1 15 ounce ricotta cheese
1/4 cup grated Parmesan cheese
3 tablespoon parsley (optional)
6 ounces sliced or shred mozzarella cheese
Grated Parmesan cheese (optional)

Directions:
For meat sauce:
In medium saucepan cook meat, onion and garlic until meat is browned. Drain off fat.
Stir in undrained tomatoes, tomato sauce, tomato paste, basil, oregano, fennel seed ( if desired) and pepper. Bring to Boil, reduce heat. Cover and simmer 15 minutes, stirring occasionally.
Meanwhile, cook noodles according to package directions for 10 to 12 minutes or until tender but still firm.
Drain noodles; rinse with cold water. Drain well

For filling, combine the egg, ricotta or cottage cheese, the 1/4 cup Parmesan or Romano cheese and if desired the parsley.
Layer half of the cooked noodles in a 2 quart rectangular baking dish.
Spread with half of the filling
Top with half of the meat sauce and half of the mozzarella cheese.. Repeat layers. IF desired sprinkle additional Parmesan cheese on top
Bake in a 375 oven for 30 to 35 minutes or until heated through. Let stand 10 minutes before servings.
