2 pounds of dried raw peanuts
½ to ⅔ cup salt

Soak peanuts in water to cover for 8 to 24 hours. Weigh down with large plate or lid so they will be fully submerged. Drain and rinse.
Place peanust and salt in pot with 4½ quarts water: bring to a boil over high heat. Cover, reduce heat to medium-low and cook 6 hours or until peanuts are tender. Add water as needed to keep peanuts covered: stir occasionally.
Remove from heat; let stand 1 hour in salt water. Drain
Store cooked peanuts in the refrigerator for up to three days. Can be reheated in the microwave on 80 percent.
