1 Turkey, 20-27 pounds
1 carrot, cut in half
1 stalk celery, cut in half
2 stalks green onion
2 cilantro sprigs (optional)
1 apple, cut in half
salt and pepper
1-2 Tbsp light soy sauce
1-2 Tbsp salad oil
1 cup hot water

Preheat oven to 400º

1. Rinse turkey and pat dry. Lightly stuff with carrot pieces, celery, onions, cilantro and apple. Lightly season the cavity with salt and pepper. Close the openings with skewers.

2. Brush outside of bird lightly with soy sauce and oil.

3. Place turkey on a V-shaped rack in a roasting pan, no more than 3 inches in depth. Pour 1/4 cup hot water over the breast. Roast for 30 minutes at 400º. Do not open oven door. Reduce heat to 350 º.

4. After 1/2 hour, pour another 1/4 cup hot water over the breast.

5. Roast approximately 2 1/2 hours total. Baste with hot water two more times.

6. Check for doneness by piercing a thigh. If the juices are clear, the turkey is done.

7. Transfer to a serving board and let stand for 15-20 minutes before carving.

Makes 16 or more servings.
