Zucchini Patties Recipe

Ingredients:  
2 medium sized zucchinis, coarsely grated (drain if needed)
1 medium onion, coarsely grated or chopped (drain if needed)
1 cup panko bread crumbs (or seasoned bread crumbs)
1 tsp baking powder
1 TB dried or fresh oregano
3 cloves minced garlic
2 large eggs, slightly beaten
salt and pepper to taste

Directions:
Directions:
1) In large bowl, stir together all ingredients except for the eggs.
2) Add the eggs and mix well.
3) Heat 1/4 inch of vegetable oil in a large fry pan.
4) Use large spoon to put zucchini mixture in pan and flatten out to make a patty.
5) Fry until golden brown, and drain on paper towels.
