1 medium angel food cake - pre-made, cut into one inch cubes
3 to 4 pints berries - a mix of red and blue, rinsed and drained
2 pints heavy whipping cream, whipped
1/2 teaspoon vanilla
2 teaspoons powdered sugar
Optional fresh mint leaves for garnish
Optional decorative star on a stick to place in the middle of the trifle

Trifle dish or clear glass bowl

Chill metal bowl and mixer blades in freezer to make whipping the topping faster and easier!!!

Meanwhile, cube the angel food cake and rinse and drain the berries. Whip the cream on high speed, along with the vanilla and powdered sugar until stiff peaks form. Put one layer of berries at the bottom of the trifle dish, followed by a layer of angel food cake cubes, followed by a thin layer of whipped cream.
Repeat layers until the dish is filled, ending with whipped cream. Top with a garnish of berries and/or mint leaves. Add decorative star, if using.

Note: I separate the red from the blue berry layers to create a red, white and blue effect.
